If you’re part of the “I-make-to-do-lists-but-hardly-ever-do-everything-on-that-list-because-I-find-better-things-to-do Club,” raise your hand. Raise it high. You’re not alone, and that makes me feel better because I’m a devoted member of this club. I have so many lists. There’s the “2011 Goals” list, the “Things To Accomplish Before the End of the Semester” list, a “My Kitchen NEEDS This” list, a “Lists I Need to Complete” list…and a “SERIOUSLY DO THESE THINGS!” list, that is probably at the bottom of the pile of lists.
My favorite list, and possibly the only one I take seriously, is my “I Want to Bake This” list. It’s comprised of things I want to bake (thank you, Captain Obvious), and it ranges from even the simplest things like Key Lime Pie to souffles. The best part about this list is there’s no deadline. No deadline = freedom to do whatever I want, and that definitely strikes my fancy. 🙂 This list doesn’t even contain half of the things I have on the same list in my head, though. I have pages bookmarked on my computer, and every cookbook I own has post-its flagging recipes that seem too good to be true. It seems that I want to bake basically everything.
There could definitely be worse goals.
Oatmeal Whoopie Pies from K Bakes have been on the IWTBT List for a long time. I would estimate the viewing of this recipe by my eyeballs at an average of twice a day for the past 2-3 months. Now, I’m not good at math, but that’s a lot of eyeball action for one recipe.
These are on the border of whoopie pies and just straight-up cookie sandwiches. I’m leaning toward the cookie sandwich side because the cookie didn’t come out quite as soft as I would have liked for a whoopie pie. But honestly, it doesn’t matter what they’re called – they’re delicious! Think of them like the Little Debbie Oatmeal Creme Pies, but better. Toatally better. 😉
How can you possibly go wrong with a brown sugar oatmeal cookie filled with cinnamon sugar cream?
Answer: You can’t.
Oatmeal Cookie Sandwiches with Cinnamon Sugar Cream Filling
adapted from K Bakes
1 cup butter, room temperature
1 cup brown sugar, packed
3/4 cup granulated sugar
3 tbsp vanilla
1 1/2 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
3 cups uncooked oats
1. Preheat oven to 350 degrees
2. With an electric mixer, beat butter, granulated sugar, and brown sugar together until well combined.
3. Add egg and vanilla and beat until fluffy.
4. Add flour, baking soda, salt, cinnamon and nutmeg until well combined.
5. Stir in oats.
6. Roll dough into 1″ balls, and place on parchment covered baking sheet.
7. Bake for about 9 minutes, or until you see the bottoms of the cookies beginning to brown.
8. After baking, set the cookies aside to cool. This is very important – you cannot add the filling until the cookies are completely cool. Otherwise you’re going to have a huge mess with melted filling all over the place. You want to eat the cream filling, not wipe it off the kitchen floor!
Word from the wise: If you try one – you’ll end up trying 2. Just saying.
Cinnamon Sugar Cream Filling
1 stick of butter, room temperature
2 cups powdered sugar
2 1/2 tbsp whipping cream
2 tsp vanilla
2 tbsp cinnamon
1 tbsp brown sugar
1. Use an electric mixer to combine the butter, powdered sugar, whipping cream, vanilla, and cinnamon until fully incorporated and smooth.
2. In a small bowl, stir the brown sugar and 1/2 tsp of hot water until sugar is mostly dissolved. Add to the filling mixture and beat until combined.
3. Pipe filling onto 1/2 of the cookies. Place another cookie on top.
4. Die happy.
